Frankly, with the drought I haven't really had much to blog about. Now the rains have returned bringing my renewed ambition. I'm not gardening this year but I do have a nice fenced in garden spot that I am building up for raised beds next year. Our soil is horrible here so raised beds are going to be necessary. I have a large pile of last years manure and straw so far which will be mixed with top soil then spread and tilled. Then bricks or 2x4's will be used to create beds. I'm pretty confident that I will be a happy gardener next year. <br>
Our 4 grape plants are finally growing this year and look very healthy. We watered them all summer and built cages around them to keep the deer from eating them again. I am extremely excited to see that we also have a few Elderberries in heavy flowering mode right now. Fresh elderberry syrups and tinctures will be so yummy! And perhaps next year...elderberry wine!<br>
We have a few tomatoes and a few herbs to play with this year and of course, the new garden bed to build. There have been a few other changes around here but I'll leave those for future blog posts. <br><br></p>

I love having productive days like today. I've been wanting a pouch to use for my my cell phone, blue tooth and iPod Nano so I can store them all together in my phone locker at work during the day. I can't take my electronics past the sally port at work as I work in a State Hospital. Procrastination has been my best friend of late, but we parted company for today at least, LOL! I made my pouch without a pattern or much knowledge of sewing for that matter. It turned out very well and will suite my needs quite nicely. After I finished that project I made some lip balm using coconut and sweet almond oil plus bees wax.The lip balm I have been using costs over 5 dollars each at the health food store and is made for sensitive folks that can't handle all the gunk that is in traditional balms.<br />

What I made today has a nice mild coconut flavor because I used the raw coconut oil I have, so no need for essential oils that are irritating to my lips. I have been wearing it all day and it is absolutely divine and really lasts! Thankfully, I had lip balm tubes on hand as like I said earlier, I've been meaning to get these made but procrastination... well, you know. Here is my lip balm recipe for anyone to use.<br />

<b>Coconut Almond Lip Balm</b><br />

1 Tablespoon Coconut oil (raw if you want it to taste like mild coconut) <br />
1 Tablespoon Sweet Almond oil<br />
1 tablespoon Bees Wax<br />
2 drops Vitamin E from a from a capsule.<br />

Melt all oils and bees wax together and take off the burner. Add the vitamin E and stir. You tubes or tins should be lined up and ready to fill before melting your ingredients together, so using a small funnel, carefully fill your containers. Let them sit until set and firm - they'll be opaque when ready to cap. It's so easy! I think if you want to use flavor or essential oils you would simply need to add a tiny bit more bees wax. <br />

I tried to sell this soap but it wasn’t too popular so I used it all at home and it is fantastic! I just don't understand why it wasn't popular. If you look on Kathy’s site, listed at the top, you will see how great this looks swirled. And if you try it, you won't be disappointed!<o:p></o:p></span></div><div class="MsoNormal"><span style="font-size: 12pt; line-height: 115%;">I always superfat my soap 5% - 10% so I always check with a Lye Calculator to gauge how much lye I will need. I like to mix my lye solution and set it to cool in a safe place (away from the snooping noses of our cats). Then I heat the oils. Just as Kathy suggests I measure and melt the oils -minus the olive oil, then I add the olive oil and pull the pan off the stove. This helps to cool it down to 110 degrees quicker. If you melt them all together, it takes much longer for the oil mix to cool to 110 degrees. I’ve been adding approximately 3 ounces of fragrance oil or 4 ounces of essential oils to the first two recipes as well as a natural colorant such as paprika, when I reach trace. That seems to work for me. Both of these recipes make about 7 pounds of soap. </style> <![endif]--> <div class="MsoNormal"></div><div class="MsoNormal"><span> </span>Much like a squirrel getting ready for winter, we are doing necessary things to prepare for a possible reduced income this winter. You know, It really sucks to think that we may very soon have only one income and, it really sucks to discover that the job market really is ‘’that bad’’.<span> </span>I suppose when life throws curve balls, you can either knocked down or catch the ball and play the game. Well, game on! So now, instead of just waiting for the “ax to fall” we are being proactive and trimming the fat from our monthly expenses. Whew, I could not believe just how much fat we needed to trim. To begin, we cancelled the XM radio in my car, cancelled our landline telephone, continued with using our 10 cents per minute Trac Phones and buying only nutritious foods at the grocery store. We are also keeping the thermostat turned down to about 69 degrees, burning as much wood as we can for heat and not using lights unless necessary. Ya know, that last one is the toughest thing to remember, LOL! I looked into using those nice Aladdin kerosene lamps for light, you know the ones like the Amish use, but oh my gosh, they are 2-3 hundred bucks apiece so that idea was a flop. Thankfully, we’ve been using florescent bulbs in the house for years so our wattage has already been reduced in that area. </div><div class="MsoNormal"><span> </span>I got to thinking about our meals and figured we could also save by preparing weekly or biweekly dinner menus instead of keeping a well-stocked pantry to prepare meals for whatever suites us on any given day. So now, we have been working very hard to stick to a grocery list related to those recipes. At the store, this also includes staying away from brand name items and grabbing the sale fliers on the way in. That is proving valuable in helping us to eliminate a lot of wasteful spending. In addition, I plan to begin baking bread and snack items at home, which will alleviate some of our food cost as well. Changing some of the things we use every day will also assist us in keeping our expenses down. Like I mentioned earlier we have already been using fluorescent bulbs but we also had energy star rated windows installed 2 years ago, only purchase Energy Star rated appliances and I at least, am driving a gas efficient car. Who knew that always thinking “green” could benefit us down the road as it is now! </div><div class="MsoNormal"><span> </span>I have not forgotten about our furred and feathered charges. We keep the cats warm in the garage at night during these Missouri winters by using an Infrared heater and we use infrared bulbs in the chicken coop and duck/goose house as well. Other things that really add up include making our own soap, my facial cleanser, facial moisturizer, toothpaste, saline nasal spray and lip balm. These things are very easy to make and cost pennies compared to buying them at the store. I believe the more self-sufficient we become the easier it will be to survive on one income if or when that need arises. I even boil water for tea on the wood stove! <span> </span></div><div class="MsoNormal"><span> </span>I was recently advised “hope for the best and plan for the worst”. <span> </span>This has proven to be an immense day-to-day challenge. Since this post has developed into what we’ve been doing to prepare for the worst, I’ll share some of my recipes in a post in the next couple of weeks, for the things I make myself. <div class="MsoNormal">There are so many reasons that I enjoy making my own soap. First of which is that I can control the ingredients that go <b>in</b> my soap. Chemicals that are common in store bought soap include heavy perfumes, BHT (a preservative) and <span>Pentasodium pentetate (a chelating agent). These are ingredients that I find unnecessary and are not in the soap I produce. Heavy perfumes can be very irritating to skin so I use either essential oils or high quality perfume oils and in small amounts as to NOT cause irritation to my sensitive skin. I have used vitamin E as a preservative and additional emollient however; I often forget to add it. In an unintentional experiment, having forgotten the bars were in the cabinet, I stored several bars of my soap in my garage for 3 years, exposing them to heat in the summer and cold in the winter. I was so pleased to find that none of the bars turned rancid. The scent was faded but the quality was excellent. I also do not need to add a chelating agent as I use distilled water when I mix my lye solution. Chelating agents bind with metal ions in hard water and supposedly make soap foam better. <o:p></o:p></span></div><div class="MsoNormal"><span>The soap formula I use makes a hard bar that is rich, moisturizing and offers a luxurious lather. It is also superfatted, which means the formula has excess fatty acids that do not match up with the sodium hydroxide (lye) molecules after saponification occurs. The excess fat remains in the soap and becomes a soothing moisturizer for the skin. </span>Adding natural colors such as beetroot powder, paprika or spirulina and adding exfoliants such as oatmeal, cornmeal and poppy seeds are fun and add a Spa treatment feel to a bath or shower. <span> </span>I often do not use colorants as I have found that the essential oils or perfume oils tint soap a soft yellow or soft earthy tan and those tints look good on soap. <span> </span></div><div class="MsoNormal">When people ask me about my soap, one of the first things they seem to stumble over is the fact that I use Lye. Once they understand the process, they are no longer apprehensive. The soap making method in chemical terms is quite complex however, simply put, the Lye molecules react with fat and oil molecules in a process called saponification to produce soap and a byproduct; glycerin. We all know that glycerin is good for skin. Soap making has become very popular and with technology, it is now easier to understand and learn. <span> </span><span> </span></div><div class="MsoNormal">I use either a Hot Process or a Cold Process for my soap making, but I tend to prefer the Cold Process because I feel more in control of the “process”. Hot Process progresses fast whereas Cold Process allows me to get into the Zen of the process and enjoy it. For me the Zen part is the stirring. I use a stick blender with a whisk attachment to slow the process and allow for a more complete mixing of the fats oils and the lye. While stirring I infuse Reiki healing symbols into the mix and this is where the Zen occurs. I went with the hopes of finding some peafowl but none were brought in. I am also looking into mini donkeys but have been repelled by the $400 price tag I have found during my searches on the internet. Before the sale we went into the barn and viewed the livestock in the pens. We saw lots of cattle, a few gorgeous horses and several mini donkeys. Yay! this gave me an opportunity to get a good look as it's been a while since I've seen a mini donkey. I talked to one of the workers and he told me I could probably get one or more real cheap. So I looked as best as I could from my disadvantaged place outside the pen. The trio I liked were a pair and their colt. They looked real nice but I am very worried about buying from a sale barn. I didn't check their teeth or see them move since I was not going to be buying anything on that day. But this really got me to thinking.<br />

We went back outside since the birds were being sold in the parking lot due to it being such a nice day. So, before we left we went back into the barn. I am absolutely in favor of rescuing a pair or a few mini donkeys from a sale barn, but I'm feeling a bit concerned about buying a pig at a poke, so to speak. So here's my question. If the owner isn't available, what exactly do I need to check for when buying pet mini donkeys at a sale barn? Years ago when I first became a student of Herb Mentor, the owner John Gallager gave a recipe for his Special Tea. Of course this tea can be used anytime, but it is an extra special treat when drank at times when your body needs the nourishing components of honey, lemon and ginger, such as when cold or the flu rears its ugly head. Now, it’s pretty common knowledge that lemons have loads of vitamin C, but did you know that the flavonoids in lemons also have anti oxidant and antibiotic properties? They can also stop the cell division in some types of cancer cells. Good stuff! Lemons are also a blood cleanser and they help the body expel toxins. Lemons are also a rich source of vitamins B and C, they have antifungal, antacid and antiseptic properties, and they assist in the process of digestion. </div><div class="MsoNormal">Not to be outdone, honey also has antibiotic and anti fungal properties if it is in its raw and unpasteurized form. And having trace amounts of vitamins and minerals, honey is also nutritious. </div><div class="MsoNormal">Ginger is used widely for its therapeutic properties when dealing with colds and flu symptoms. Ginger has antiseptic properties, eases nausea and coughing and promotes sweating. Ginger is very warming and good for chills and poor circulation. </div><div class="MsoNormal">So, enough talk about how good it is; here is the recipe for this delicious tea.</div><div class="MsoNormal">Add 2 tablespoons of grated ginger, 3 tablespoons of honey, 4 tablespoons of fresh lemon juice into a 1 quart thermos. Then add 1 quart of boiling water and let steep for about 20 minutes. Then strain the tea into your mug, sit on the couch with a good book and drink. </div><div class="MsoNormal">This recipe can be altered if the lemon or ginger is too strong for you. And, of course if it isn’t sweet enough, add more honey. I add about 1 teaspoon astragalus root slices to my tea mixture, as it is great nourishment for the immune system and it doesn’t alter the yummy flavor. You can also add boneset for fever reduction or perhaps echinacea to stimulate your immune system. 3. Add the dates one at a time through the feed tube of the food processor while it is running. What you should end up with is a mix that appears rather like cake crumbs, but that when pressed, will easily stick together (if the mixture does not hold together well, add more dates). <br />
4. In a large bowl (or the pan you plan on putting the brownies in), combine the walnut-cacao mix with the chopped almonds. Press into a lined cake pan or mold. Place in freezer of fridge until ready to serve (it is also easier to cut these when they are cold). </div><div class="MsoNormal"><span style="font-size: 12pt; line-height: 115%;">These are incredibly delicious and o' so easy to make. And believe it, these are actually good for you! When I found this recipe on Sarah Britton's site and since they sounded so good, I made them immediately. I think they took all of 5 minutes to whip up and maybe 10 minutes to make into the balls (see picture). It would probably take less time to press this mixture into a casserole dish to make traditional looking brownies, but I wanted to give them my own twist and so I made them into balls. I took them to work and since they were in small bite size portions, they were very easy to pass out to my coworkers. Unsurprisingly, they went pretty fast! <o:p></o:p></span></div><div class="MsoNormal"><span style="font-size: 12pt; line-height: 115%;">I like knowing that when I whip these up I am going to eat a treat that is much healthier than eating store bought, highly refined, processed and possibly contaminated brownies or candies from the store. Also, since they are fresh and raw, their nutrition hasn't been lost in lengthy storage or over processing. Both walnuts and Almonds are very nutritious, both containing loads of B complex vitamins. Those are great for giving you energy, nourishing your nervous system as well as your skin, nails and hair. If you have an issue with sluggish digestion, walnuts and almonds can provide you the necessary b- complex vitamins so your body can make the required acids in your stomach needed for digestion of fats, protein and carbohydrates. In addition, both of these nuts contain omega 3 fatty acids that if eaten regularly can actually reduce your risk of developing some types of cancer. Cool huh? Omega 3 fatty acids also help to lower the bad LDL cholesterol and raise the good HDL cholesterol in your blood.<o:p></o:p></span></div><div class="MsoNormal"><span style="font-size: 12pt; line-height: 115%;"><span> </span>So, what about cacao? Simply stated, cacao is unprocessed cocoa. The processed cacao becomes cocoa which is used in the production of chocolate. More good news is that cacao also contains a rich supply of the minerals calcium, zinc, copper and potassium as well as vitamins A, C and E. Another interesting fact is that cacao stimulates the body’s own antidepressant chemicals, serotonin and endorphins and it contains two chemicals - phenylethylalamine and anandamide that enhance mood and help you focus. <b>9-22-11;</b> We kicked the 4 oldest Guinea's out of the aviary due to their aggressive and competitive personalities. That was no easy feat as they really did not want to go. We did this because they have been just plain mean and have been harassing the smaller chickens and guineas to the point of them staying in the chicken coop all day and not coming out to feed or drink. These guys reacted to the boot out with constant chatter in the way only a guinea can do. And it was loud! But we did our best to ignore it and kept on with our chores. We provided them with food and water close to the flight run and they ate off and on all day. Not to much bug activity this late in the season. They ventured from the immediate area for very short periods visiting the ducks and geese in the duck yard and they even flew up to the roof of the barn. By the way - nails on a metal roof is almost as bad as nails on a chalkboard, LOL!<br />
<br />
When evening fell, these silly birds didn't roost in any of the available trees in that immediate area so for their protection, we closed the other birds into the aviary and let the adult guineas into the flight run. That was easy as they really wanted back in. <br />
Today we put them back outside and they stayed pretty close to the flight run and visited the ducks and geese again. They don't seem to aware of the need to roost at night so I guess we'll be putting them back into the flight run again tonight. I hope we can keep this up until the younger guineas get bigger. And I guess when winter comes they will need to spend it in the aviary. I'm quite please with myself as I worked it out with Excel inserting shapes to get the bales, whiskey barrels, work bench plus decking for chairs and a table. What a cool program for designing gardens! The garden entrance gate is on the west side near the whiskey barrels, the beans are on the north and so on. With all my excitement in designing this garden I totally forgot to consider companion planting, shesh, LOL! My garden book that features this subject is tucked away in a box somewhere so I Binged "companion planting for gardens" and found a good site that explains it in a no nonsense way. Wohoo! After consulting this information I see that I don't need to change a thing! All I need to do is add are some pest deterring flowers and herbs which I can do when I begin planting. By the way, I chose to use straw bales due to the poor quality clay soil here and the unbelievably high cost of having top soil hauled in. Straw bales are also cheaper than lumber for raised beds and the straw will compost and improve the soil for future gardens. <br />

What you can't see in the picture is the watering system I will have. One or two long soaker hoses connected to a timer so I can water while I'm at work and then off the timer so I can water when I get home from work. We still have some drip irrigation hose left from a previous garden and we may use them, but for now I'm going with the soaker hoses as we already have those too. Additionally, we fenced in my garden spot and will complete it with electric wire on top and rabbit fence on the bottom to keep 'said' critters out. My first and last garden here was a disaster as the deer and rabbits ate everything down to nubs on the ground! I believe I'll have the advantage this time. And who knows, I may have enough excess produce to can! The plants would also serve as a privacy barrier on the deck. I chose a variety called Kentucky Wonder, which is stringless and has brown seeds. I normally opt for bush beans but I wanted to see how my idea for pole beans would turn out. As the season progressed, extremely high temperatures and a draught assaulted Missouri. I watered my beans faithfully for about a month but the high temperatures made it hard for me to continue in my faithful efforts. </span></div><div class="MsoNormal"><span style="font-size: 12pt; line-height: 115%;">Now that those high temperatures have passed and we have had a few rain showers so I have been planning my fall preparations for my herb beds. I figured I would just be tearing out the beans in an “oh well, better luck next year” frame of mind. Much to my surprise today, I found loads of nice looking green beans on my plants. The foliage is dying back which makes it so much easier to see the bounty these plants have produced to spite the harsh temperatures and lack of water. They aren’t the most glamorous of beans but they are beans :-)</span></div><div class="MsoNormal"><br />

Our 8 chickens recently saw 3 more chickens and 7 guineas move in so the coop needed to be remodeled to accommodate the whole brood comfortably. The coop, by the way, is nestled inside a very roomy aviary and measures 12 ft wide by 4 ft deep by 8 ft tall. The Aviary is 12 ft wide by 24 ft long with a 12 ft ceiling. Our birds have 2 large summer roosts inside the aviary but winter here in Missouri is too cold for those. We installed 3 stair step roosts on one side of the coop and situated it for ease of cleaning and placed a single roost on the opposite side. The single roost is for our original 3 production reds - the queens of the coop. This remodel also allowed room for nesting boxes and even food and water if necessary. Since it completion, all our birds have been roosting at night in the coop and have completely stopped using the summer roosts.<span> </span></span></div><div class="MsoNormal"><br />

Therefore, as the heat winds down we will be a blur of activity in our attempt to get all that we wish to achieve for 2011 completed. Thus far, we have gotten all the posts up around the new garden spot and completed the wooden posts and metal gate for the entrance. Next, we will be adding the welded wire fencing to the posts with chicken wire added to the bottom and an electric wire to the top. My woes with gardening in the past-included deer that ate the tops off everything I planted or pulled plants out of the ground, and rabbits that chewed on all my new plants down to nubs. I am determined to eat my own produce next year! <br />
<br />
I am so excited about my garden spot for next year. It will consist of raised beds with a thick layer of sawdust in between the beds to prevent weed growth. We should be able to get the sawdust placed and the raised beds made and filled before the first flakes of snow stop our progress. Our land is pretty much void of top soil and this area of the country is clay, so the fill dirt is going to be coming from someplace else and amended with the compost we make every year. We make our rich compost using the waste we get from scooping the poop out of the chicken coop and duck house. We use sawdust for bedding in those areas, and the composted wood and poop combined with grass clippings, tree leaves and produce waste is fantastic for plants. That combination has yielded us fabulous herbs, which thankfully, the deer and rabbits don’t seem to like. <br />
<br />
A few weeks ago we replaced a few chickens and added 8 guineas to our stock due to a raccoon raid last month. That raid took 6 of our young chickens. What a horrific disaster that was! It left us with only 8 chickens but thankfully, spared one rooster. Fortunately, the raiders were still in the aviary so Bill was able to permanently stop 2 of the 3 involved. I really don’t believe the one that got away will want to come back any time soon. That afternoon, after he got home from work, Bill did a thorough check to find how they were getting in. We had checked over the aviary in the spring but we didn’t see the holes created by raccoons walking on the top of the flight run. The area where the flight run attaches to the aviary was the location of the holes that allowed the raccoons to enter because the staples had popped out! <br />
<br />
Bill now has those areas secured but then we lost one guinea last week. I’ve learned that the critter was either an opossum or a raccoon as it found an area where the chicken wire had come loose from the fencing at the ground, and took it right through the fence. Now we have those areas are more secure. We have never had much of a predator problem until this year. Those buggers are teaching us a lot related to just how cunning they are. I believe the extremely hot and dry weather we’ve been experiencing this summer is affecting the natural prey the raccoons and opossums normally eat so they are concentrating their efforts in getting to our birds. And naturally, we are learning from them and concentrating our efforts in keeping them OUT! Next year I want loads of produce to eat and can as well as loads of eggs and baby chickens to sell. It’s been a struggle this year but next year our Patchwork Prairie could actually begin to pay for itself. <br />

This evening instead of eating another salad or a cold sandwich, I prepared a delightful dish of raw spaghetti with raw marinara sauce. No really, it is very good and very nutritious since it’s not cooked. Plus, it’s extremely fast and easy to make. Here’s how it is done. You take;<br />
<br />
½ cup tomato, chopped<br />
½ cup sun dried tomatoes soaked for 30 minutes or you can use oil packed.<br />
½ of a red or yellow bell pepper<br />
1 tbsp fresh minced basil, if you have it<br />
1 tsp Italian seasoning<br />
1 small garlic clove or less depending on the individual, minced or crushed in a garlic press. <br />
1 pitted date<br />
2 tbsp extra virgin olive oil<br />
Dash of salt, pepper and cayenne pepper<br />
<br />
Mix all ingredients in a food processor fitted with an S blade until the mixture is blended thoroughly. You may need to scrape the contents off the side of the processor with a plastic spatula a few times. I let this sit for about 30 minutes so it can come to room temperature and so all the flavors have a chance to blossom. See, easy peasy! <br />
<br />
Then place about 3 inches of a medium zucchini or yellow squash on the plate of a spiral slicer and spiral away. You can also use a peeler and make lots of thicker fettuccine type pasta. Place the vegetable pasta on a plate and top with the marinara from the food processor. I top that with parmesan cheese and devour it with great pleasure. This can be served alone or with a side salad. Sometimes I soak ½ cup walnuts for a few hours and add that to the marinara for a more meaty texture. This sauce will keep for a few days in the fridge if needed. I rarely have any left over to store. Give it a try and leave a comment about how you like it.<br />

When I opened the sliding glass door to get a better look, she ran like the wind and I never saw her again. Until a few weeks ago when she appeared on our deck, looking quite emaciated with a large patch of hairless skin on the back of her neck. I sneaked around the back and took a small bowl of dry food to the deck and rattled it to get her attention. She was panting and looked very weak but got up so fast she startled me. She ate all we gave her and drank a good amount of water as well. As she ate, we got a good look at her. Given her emaciated state, we decided she had been either dumped or possibly abandoned. We knew of a family up the road that recently left the area. In addition, that large patch of bare of skin on the back of her neck, well of course, it was full of ticks. <br />
<br />
The weather in Missouri has been wickedly hot and humid this summer and in her condition, we knew she would not last much longer on her own. We gave her for all the food and water she wanted that day and continued on day 2. She slept under the deck but came out quickly when we called to her from the patio. She was weak but still had a loud purr and definitely used it to her advantage. We also found that when she meow’s she does a cute two-part meow that really sounds like she’s saying “hell llo”. Later on day 2, we carefully removed all her 30+ ticks from the back of her neck and one toe. I then applied some antibiotic ointment to help heal and soothe those tick bitten areas. We checked carefully for fleas but amazingly, she had none! <br />
<br />
Still unsure what to do with this gal, we continued to care for her, but outside since we have 4 cats in the house. On day 3, she was looking weaker and pretty heat stressed so we decided to bring her into the house and close her in the office in order to keep her segregated. She rested on the floor for 2 days getting up only to eat, drink or use her litter box. I watched for signs of disease like diarrhea, sneezing, runny nose, coughing, gait, eye changes and so forth, but nothing appeared. By now, she had won our hearts and we decided she could stay but as an outside cat after she was healed. On day 5, we took her to our Veterinarian in Columbia. She received a general health exam, rabies injection, worming, an antibiotic injection and blood tests for all the bad stuff cats can get like FELV, FIV and heartworm. So now, we need a name for this gal. After a lengthy search on the internet for ideas, I came up with a few names that I liked and ran them by Bill. We both decided we liked Aurora since she has so many colors on her coat. <br />
<br />
After she passed her quarantine period, we began introducing Aurora to our cats since she is still recovering from her emaciated state, still in the house and the weather continues to be so wickedly hot that she cannot be outside in her condition. Aurora initially flunked house cat 101 by being snarly to our cats for days on end and her incessant desire to be on our kitchen counters. My bet is that she was an only cat and perhaps even abused as she has an aggressive response to feet if they pass her to fast. After a few weeks and much tolerance from Bill, my cats, and me, Aurora is finally beginning to settle into our house routine. Aurora has her issues and she still has a lot of healing, both physical and psychological, in her future but unless we are able to find someone that is willing to take a very pretty cat that has issues, she is welcome to stay with us either indoor or outside, for the remainder of her days. <br />

We didn’t take any pictures of Aurora in her worst condition. However, this is how she is looking 3 weeks into her recovery. <br />

I never paid any attention to the information, because I have never been overweight. A few years ago, I began hearing about green smoothies again but this time the focus was on the nutritional benefits of the raw ingredients included in them. This time I took notice, because I am always interested in learning more about nutrition. Today with the internet, we have a huge database for learning about nutrition, so I began reading about green smoothies on my own. There is an abundance of information on the Raw Food movement if you are interested and the USDA has a site that also gives everyone information related to the nutritional content of the “raw” fruits and vegetables you decide to include into your smoothies. I’ll post a link at the end of this blog post.<br />

Recently, I’d grown so tired of eating a cooked or cereal breakfast that I began experimenting with making green smoothies. Just a basic recipe like the one below which was all it took for me and now I’m hooked! For me, green smoothies have become a great way to include more fresh and nutritious fruits and vegetables into my diet since I have a busy schedule. Now I can get 2 vegetables and at least 2 fruits consumed in a delicious smoothie, which makes it so much easier for me to get my daily 5 vegetables which is needed according to the most recent nutrition trends. After drinking these green smoothies for a couple of weeks, I realized that I had more energy and felt more alert. Then it dawned on me, that the difference was that I was actually eating real food and not my previously overly processed or sugar laced mush. <br />

Today my smoothie was my Basic Smoothie Recipe<br />
• a good handful of raw spinach, <br />
• ½ raw zucchini <br />
• one small peeled apple, <br />
• one banana, <br />
• 1 cup coconut milk, <br />
• as well as about 3 tablespoons raw Chia gel and 2 tablespoons raw hemp seed protein powder. <br />

Chia gel is another way to supplement my diet with vitamins and minerals in a natural way and Chia seeds are known to be an appetite suppressant so I feel satiated longer into my morning – I’ll post the easy recipe and information link at the end of this blog post. My smoothies are not 100% raw but that isn’t my focus either. I want as much nutrition as I can get in a low processed smoothie that I can drink while I’m getting ready for work. My morning smoothies are loaded with vitamins and minerals, taste great and make me feel wonderful. Later in the summer, I’ll add some information related to some wonderful herbs you can add for the benefit of immune system nourishment as well. That will be a whole blog post in itself. <br />

Since variety is the spice of life, I also use watermelon, cantaloupe, peas, a carrot, kale, dandelions greens, collard greens, spring lambs quarter shoots, cucumber, yellow squash, grapes, blueberries, strawberries, blackberries, papaya, mango, orange or red bell pepper, corn, shitake mushroom, nectarine, and alfalfa sprouts. The selections are vast; however, I don’t have access to as much as some folks do that live in more temperate climates. The key for me is to use only four items excluding the liquid, otherwise my smoothie is either too thick or the quantity is more than I can consume in the morning. <br />

I’m very aware of a growing debate over Raw vs Cooked vegetables and fruits, and the final decision lies with the consumer. In my research, I have found that there are nutritional benefits to both raw and cooked vegetables however; in some cases, the difference is minor. The key I believe is in moderation. In addition to a lot of raw fruits and vegetables, I also eat cooked (steamed) vegetables and I believe I am getting the best from my foods that my body can receive. Another interesting tidbit that I’ll include is that science has found that cooked foods actually acidify your body and, that acidic environment has been linked to cancer related ailments. Well if raw fruits and vegetables alkalize your body, then I am all for eating more alkalizing foods so I can decrease my chances of my developing cancer. With the growing disease and obesity rate in the US, it is prudent that we all become more aware of our food choices and make healthier decisions.<br />

I was in the house reading a book on the couch with the cats all around me, all snoozing contentedly. I became aware that some of the ducks and geese had come back up from the pond to the duck house, situated right across from the house, as the geese were squawking their arrival as they normally do. However, something was different; the geese continued to squawk for several minutes as opposed to the usual few they normally belt out. I was concerned that a dog or fox was roaming about, so I went through the gate and out to the duck yard to see what was bothering the geese. Nothing looked unusual until I was closer to the duck house. That is when I noticed one of my Ancona ducks (Cocoa) was all by herself and was sitting with her head down and not moving when I approached. Much to my horror, I also noticed she was bleeding from two wounds on her pretty white neck. One at the back of her head that was about a half inch long and looked like a tear and the other one was about 1 1/2 inches long and looked like a tear as well. <br />

After thanking the geese for being so vocal, I picked Cocoa up and rushed her to the house. The geese and ducks immediately went back to the pond. In the house, I grabbed a dishtowel on the way to the garage to get a bigger towel. I needed to examine her wounds and figure out whether or not Cocoa was going to live through this trauma. My heart was really racing at this point, as I feared that Cocoa’s injuries were going to be fatal. I placed Cocoa on some towels on the dinner table, where I could better see her wounds and began applying pressure to stop the bleeding on both wounds. After several minutes, I noticed that there were no more active bleeding spots, which was very encouraging since I did not want this little girl to die. <br />
<br />
Now that I had the bleeding stopped, I needed to get the clumps of clotted blood off her so I could examine her further and decide how I was going to fix this mess. Since Cocoa was being such a good patient, I took her outside to the front of the house and used the garden hose to rinse the wound areas clean of clots. After getting that done I saw to my relief that only the skin had been torn and no muscle tissue was damaged on her neck, whew!!! Her beak had a crushing type injury so It was then I figured that she most likely had been attacked by a snapping turtle on the pond. Poor girl! I was also able to examine her left eye at that time and found that the injury she sustained to her eye last winter has caused her to become blind in that eye.<br />

Now what do I do? I knew she needed stitches but on Memorial Day I was not about to call a veterinarian to stitch her up. That would be entirely too costly. Having read numerous articles written by homesteaders that do their own first aide on their animals, including stitching up skin tears, I decided that perhaps I could do the same thing. However, I would need to wait until my husband got home from work. Unfortunately, as bad luck would have it, he was being held over for several hours into the evening. <br />
<br />
In the meantime, I got Cocoa cleaned up and applied globs of Antibiotic ointment to her wounds. Then I fixed a nice straw nest in a fenced area in the barn for her with food and water that included electrolytes for ducks. Next, I went online to find out any information about stitching up Cocoa. I discovered several sites that have complete instructions on how to stitch up wounds, Yeah! I used to work as a dental assistant so I’ve seen a lot of stitches, but I needed a refresher since that was a long time ago. I also found some articles related to duck injuries which reminded me that since a ducks normal body temperature is around 107 degrees, infection shouldn’t be a big concern, as bacteria do not like temperatures that high. Another Yeah!!! <br />
<br />
Next, I gathered my materials needed to stitch up Cocoa. A common needle from my sewing kit, good and strong poly / cotton thread in a dark color since her neck is white, hemostats and bandage scissors from my first aid kit. I cut a few lengths of thread about 12 inches long and boiled them for 10 minutes to disinfect them. I then scrubbed my hemostats and scissors with soap and water, and then boiled them for the same amount of time to disinfect those as well. I got the thread out of the water after 10 minutes and placed them on a paper towel, wrapped them in another paper towel and placed those in a zip lock bag. The scissors and hemostats went into another zip lock bag. <br />
<br />
When Bill got home, I gathered all the materials I needed and Bill and I headed to the barn to fix up little Cocoa. She was still being pretty cooperative and we saw that she had been attempting to eat and she had been drinking her water with electrolytes – a very good sign. With Bill holding her in a towel, I began by using scissors to trim away as many feathers as I could since I don’t have any clippers. I also had to pluck some feathers but Cocoa didn’t seem to mind. Then I used the information I found online, cleaned up the wound again and began stitching her up. Bill was a bit squeamish about this part and we had to take a break so he could regain his composure, LOL!!! She got 3 stitches on the longer skin tear at the base of her neck which seemed to be enough, and I left the smaller one at the back of her head without stitching as it looked like a puncture wound that may need to drain. <br />
<br />
I was then able to get a better look at her beak. It was definitely a crushing type injury on the top with a tiny little tear. Those snapping turtles are brutal! Cocoa’s nostrils were clogged with blood so she was breathing through her mouth. I was not able to clean them out but I knew, in time, she would be able to using the bucket she has for drinking water. All her wounds got a generous glob of antibiotic ointment, more to keep the flies off her wounds than anything else. Last, I gave her a nice Reiki treatment and we put her back in her recovery area. <br />
<br />
The next morning we found that Cocoa was still with us. She had been drinking and had eaten a little from her food bowl, Woo hoo!!! We spent the next week, twice a day, cleaning her wounds with Betadine, using the antibiotic ointment to keep the flies off and giving her Reiki treatments. After a couple of days Cocoa was finally able to get one side of her nose cleaned out in her water bucket and she was breathing more normally again. Funny, she was still laying eggs during her healing period. I told her she needed to conserve her energy, but she didn’t listen. By the way, It took about a week before Cocoa was able to get the other nostril cleaned out and I was so happy to see that!!! Both nostrils looked just fine when they were cleared. <br />
<br />
Two days into Cocoa’s recovery, I was concerned that Cocoa could become estranged from her little pod of ducks so we set up a small area with fencing in the duck house that would allow her to be in the company of her fellow ducks during her recovery period. That really seemed to perk her up and she began eating even more. She was even attempting to squawk through her painful beak!!! <br />
<br />
After 7 days, we took the stitches out and her wounds looked great with only some residual redness and the lack of feathers of course. For a few days after removing the stitches, we continued to treat with the antibiotic ointment, just for good measure. We also kept Cocoa from other ducks for several more days because when they breed the drake grabs a hold of the ducks neck right where her injuries were. <br />
Cocoa had the whole duck yard to herself during her recovery period until I felt she was ready to mingle again. It was so sweet to see that Cocoa’s pod of ducks stayed nearby during her recovery. When that time came, her pod came into the duck yard and treated Cocoa no different than if she had never been attacked, and they immediately resumed their normal activities. Since her injury, Cocoa has become faster on her legs and now outruns most of the drakes. It’s nice to see that her own drake is very protective and does not allow the other drakes to come near her. It’s normal behavior, but still nice since an aggressive drake could have re-injured those wound sites. Today, Cocoa is a happy and healthy Ancona duck. She’s blind in one eye from a past injury but she lived through her encounter with that snapping turtle. It is definitely a ducks life at the Patchwork Prairie. <br />

Description: An attractive summer annual, that is upright and branched. It grows up to 6 feet tall. The stems are grooved and it sometimes has purplish vertical stripes on the main stalk. The Leaves are arranged alternately along the branches, and are covered with tiny and grainy, white pollen like substance. The lower leaves are on stalks, are triangular, and irregularly toothed making them look like a goose’s foot. The leaves toward the top of the plant do not have stalks, are narrow, and are oblong in shape. Leaves are up to 3 inches long and 1 ½ inches wide.<br />

According to my book “Crabgrass Muffins and Pine Needle Tea”, Lambsquarters nutritional profile, for ½ cup cooked greens, includes a whopping 3.5 grams of protein, 5.5 grams of carbohydrates, 2.0 grams fiber, 324 mg calcium, 1.5 mg iron, 684 mg potassium, 40 mg ascorbic acid, and 3800 micrograms of beta-carotene, 100 micrograms of thiamine, 200 micrograms of riboflavin and 1000 micrograms of niacin. <br />

These greens actually have more nutrition than spinach! And, since it is a close relative to spinach, it contains oxalic acid which means that it binds with some of the calcium that is in the plant, but thankfully, not the calcium in the other foods in your meal. <br />

This is another garden "weed" I’ve discovered that is not only great tasting but also extremely nutritious. I have been watching this grow in my yard for a couple of years but I wasn’t real sure that it was actually lambsquarters since it, like many tasty weeds has a poisonous looka-like. So, I consulted my field guides, however, they didn’t give me the answer I was looking for. Then, I went to my trusted book titled “Crabgrass Muffins and Pine Needle Tea” as I remembered that it has a section that gives the poisonous look- a- likes for several edible weeds. I discovered that there is one in the same Goosefoot family but that this look- a-like has a rank odor when picked. <br />

What I have growing here has a wonderful spinach odor when the leaves or stem is torn. To test further I took a tiny bite of a leaf and discovered that it tastes remarkably like spinach, only sweeter. That is how they taste when cooked as well. I knew then that my research paid off so I harvested a batch for our dinner. And I wasn’t surprised to find that my husband loved them too. <br />
<br />
Steaming seemed like a good way to preserve the nutrients since boiling just pulls the nutrients out and into the water. Which is not a bad way to prepare them if you don’t mind drinking the pot liquor, LOL. To prepare them I rinsed them well under cold water, steamed a big batch for 10 minutes and served them with a little butter, salt and pepper. We later shared this discovery with our Greek friend named John and he referred to them as Horta – boiled garden greens. He used fresh lemon squeezed onto the greens, and thus we tried it as well. Absolutely awesome!!! I suppose you could dress these versatile greens with anything that you like to put on any other greens. <br />

I now have a good-sized batch growing with my Thyme and Rosemary in my herb garden. And I've have been cutting the top few inches every week and these plants are bushing out and giving me more greens every week. I have a couple of plants that I am letting go to seed so I can insure that I have more growing next year, and perhaps in a different location so they aren’t competing for space with my culinary herbs. I think that next year I will have a vegetable garden with several wild foods as well as the domesticated selections. Bon Apatite! <br />

One of my favorites is the common Dandelion - Taraxacum officinale. In the spring, I harvest the flowering parts of Dandelions and fold them into my favorite pancake recipe to make tasty and pretty, Dandelion pancakes. The flowers nourish the nervous system as well as the heart.<br />

I love to steam the spring greens and eat then with lemon and pepper or put into homemade soups and beans. Most people don’t realize that the poor misunderstood Dandelion is full of vitamins, minerals, and is a lot more beneficial than the majority of the bland and processed green foods we are accustomed to buying and the grocery store.<br />
<br />
According to Linda Runyon, the author of a popular book titled “Crabgrass Muffins and Pine Needle Tea”, one half cup of chopped raw dandelion greens tossed into a salad adds a mere 21 calories, but, also amps up the protein by as much as 2.7 grams! That’s not all, as they also add 9.2 grams of carbohydrates, 187 mg of calcium, 3 mg of iron, 398 mg of potassium, 30 mg of ascorbic acid, 800 micrograms of beta carotene, 200 micrograms of thiamin, 3 mg of iron, 300 micrograms of riboflavin and 900 micrograms of niacin to your salad.<br />

Now sometimes in the summer months, I find that raw dandelion greens can be tough and the big leaves are bitter so don’t use those. One way I get around that is to add them to a raw Mediterranean Kale salad. I got my recipe from Jennifer Cornbleet’s book titled “Raw Food Made Easy for 1 or 2 people”. The recipe calls for using;<br />
<br />
4 kale leaves with stems removed then thinly sliced, (I also add ½ cup of thinly sliced dandelion leaves)<br />
1.5 tsp olive oil <br />
1.5 tsp fresh lemon juice<br />
1/4 tsp salt <br />
1/4 to 1/2 diced red bell pepper <br />
1 tbsp or more pine nuts <br />
1 tbsp sliced black olives – I use Kalamata’s <br />
Fresh ground pepper to taste.<br />

I increase the olive oil and lemon juice to 1 tablespoon because I believe it’s tastier that way. The trick to this is to begin by placing the greens in a large bowl with the fresh lemon juice, olive oil and salt. Then using clean hands, in the bowl, rub the greens between your fingers to work the oil, salt and lemon juice into the greens. Do this for several minutes and it will actually tenderize the greens. Then you add the red pepper, pine nuts and olives then mix it all together with a spoon. I let this sit for about 15 minutes before I eat it. This recipe will keep in the fridge for about 3 days, that is if you have any left and can keep yourself from eating it before the 3 days is over, LOL!!! I certainly can’t. <br />

What other parts are left to eat? Oh, the root! Roasted Dandelion root makes a nice herbal brew that actually tastes like weak coffee. I don’t usually roast the root myself but buy it from an herbal supplier such as www.mountainroseherbs.com. I buy it occasionally and use it in the nutritional herbal brews I make using Stinging Nettle and Oatstraw, but I’ll save that recipe for another blog post. The root of the dandelion is best when harvested in the fall when the plant is sending all of its energy and nutrition to the root for storage through the winter. I rarely find those lovely half inch diameter roots to use in stews but when I do, I whip up a batch of vegetable stew and include some scrubbed and coarsely chopped dandelion root about 30 minutes before serving. The small ones work too, but they are a bit harder to work with. Not only is the root full of minerals and some vitamins, but it’s also nourishment and a tonic for your liver. By that, I mean that it feeds it and assists it in pumping out the bile needed for digestion.<br />
<br />
The only thing that a someone new to eating Dandelions needs to know is that all parts of the Dandelion do have laxative and diuretic properties, so it’s wise to begin eating small amounts, like one half cup or less, at first to see how your body responds to this awesome ally. So if you have a bunch of Dandelions in your yard that have not been sprayed with poisons or bodily fluids from your pets…. Pick some smaller leaves, swish them in a bowl of cold water and begin adding them to a nice summer salad. Oh, you can also pick some of the sunny flowers and shake or blow off the ants (they love the nectar and pollen), and cut the green parts off with a knife and add those, unwashed, to your salad. Your body will love you for it and it is a fantastic way to start learning about the herbal allies you have right in your own back or front yard.<br />

I have some great organic cherry syrup that I’ve been using for flavor after I bottle it and I plan to use some grated ginger today as well. Ginger is my all time favorite. I fell in love with Kombucha after buying a bottle, out of curiosity, several months ago while shopping at my favorite health food store. I did some reading and found that it’s actually purported to have some health benefits such as detoxifying the body with it’s antioxidant qualities and improving digestion and assimilation of the building blocks in nutritious foods. I’ve also read reports that it assists with the symptoms of diseases as well. Well, that makes sense - since if my body is detoxified and is better able to assimilate nutrients from the foods I eat then I am in better condition to ward off any symptoms related to dis- ease. I’m pretty happy to have another tool to keep myself healthy, and I just love the taste of the fizzy stuff.<br />
Kombucha is quite costly when purchased in a store so I found a coworker that makes her own and she gave me a SCOBY so I can make my own. SCOBY is an acronym that stands for Symbiotic Culture of Bacteria and Yeast. It looks like a mushroom and kind of feels like one too. I took my new scoby home, made 4 quarts of sweetened tea, and let it cool to room temperature. <span> </span>I then put the tea in my sanitized glass cookie jar, added some kombucha tea that my scoby came, mixed and added my scoby. This has to be covered so the wild yeasts and little fruit flies in the environment can’t contaminate the scoby and tea. I then set my covered Kombucha on the fridge to keep at about 72-75 degrees so it can ferment for about a week. <span> </span>I like my Kombucha somewhat sweet so I taste it in a few days to gauge how long it will take before I can bottle the finished tea. I use 16 ounce Grolsch style bottles because they are so easy to clean and re-use. They’re pretty sturdy so I can do a second ferment in the bottle that produces the fizz I like. I’ll post some links to some pages that have pictures of the whole Kombucha making process so you can click and see for yourself how easy it is to make this elixir of life.<span> </span> <br />
